The truth is that Meltkraft’s chef, Rebecca Foxman, is my son’s friend; they attended Abington Friends School together. Somehow, they managed to get approval for a senior project that consisted of travelling around New England, eating and rating traditional foods, from clam chowder to Indian Pudding, so they are both long-time foodies. Although my son’s specialty continues to be eating (and reviewing films), Rebecca has gone on to be trained at the Culinary Institute of America and to work at some amazing restaurants!
The coolest thing about where she works now, Meltkraft, is the cheese. It is handmade by the Valley Shepard Creamery, some on-site at the Reading Terminal Market. In my first amazingly delicious oozy sandwich, the Somerset, the nutty cheese was handmade from Guernsey cow milk. I can’t wait to go back, buy some Tartufo Shepard to bring home, and try another sandwich. I love handmade cheese and being closer to the cows…and sheep and goats!
